2 Ingredient Coconut Flatbreads

Coming in haaawwwt to your curry night, give these a whirl! They are SO easy, SO tasty and SO much healthier than anything you’d find in the store, plant based & gluten free too!

My love for coconut is getting up there with my love for avocado, seriously what can’t you do with coconut!?

These bad boys come out like puffy little naan, are soft, fluffy and flexible. If you have 7 minutes, do yourself a solid and make these! They are made of only 2 ingredients ( plus water and salt) and have oodles more fibre to support healthy digestion

Double or triple the recipe and customise with herbs, garlic, sun-dried tomatoes. olives or anything you fancy. This recipe makes 4 tortilla’s

- What do you need:

  • 1/2 cup coconut flour

  • 2 tbsps Psyllium husk

  • 1/4 tsp salt

  • 1 cup water

How to:

In a large bowl, stir all ingredients to combine

Let it sit for 5 minutes

Roll the dough into a ball and slice into 4 pieces

Roll those smaller pieces into balls

Individually place between 2 bits of baking paper and roll with a rolling pin- or wine bottle ;)

Pan fry on a non stick / well seasoned skillet for 2-3 minutes each side
